Custard Powder Sponge

Ingredients
  • 4 eggs
  • ¾ cup castor sugar
  • ½ cup custard powder
  • ½ cup cornflour
  • 2 teaspoons baking powder
Instructions
  1. Butter a pair of sandwich cake tins, sprinkle with flour and toss out excess flour. Sieve custard powder, cornflour and baking powder together three times. Separate eggs and whip whites until stiff. Add sugar and beat again until sugar is dissolved. Add yolks and beat in thoroughly. Fold in gently but thoroughly the sifted dry ingredients. Divide between the tins evenly and bake in a moderate oven (180oC) for 20 to 25 minutes until sponge shrinks away from the sides of the tins. Fill with jam or lemon butter and cream. Sprinkle top with icing sugar.
