Chicken with Garlic Potatoes and Rosemary

Easy to prepare and just through into the oven
Ingredients
- 8 x 200g chicken thigh cutlets (chicken chops)
- 800g chat potatoes halved
- 30g melted butter
- salt and pepper
- 2 (140g) bacon rashers chopped coarsely
- 2 cloves garlic, thinly sliced
- 2 tbs fresh rosemary
- ¼ cup green olives
Instructions
- heat oven to hot 230 degrees
- cut 2 slashes into the chicken to the bone
- place chicken and potato into a large oven pan
- brush with butter and add salt and pepper cook uncovered for 40 minutes
- add bacon garlic and rosemary cook for 10 minutes
- remove from oven and add olives
