Chicken with Garlic Potatoes and Rosemary

Easy to prepare and just through into the oven
Ingredients
  • 8 x 200g chicken thigh cutlets (chicken chops)
  • 800g chat potatoes halved
  • 30g melted butter
  • salt and pepper
  • 2 (140g) bacon rashers chopped coarsely
  • 2 cloves garlic, thinly sliced
  • 2 tbs fresh rosemary
  • ¼ cup green olives
Instructions
  1. heat oven to hot 230 degrees
  2. cut 2 slashes into the chicken to the bone
  3. place chicken and potato into a large oven pan
  4. brush with butter and add salt and pepper cook uncovered for 40 minutes
  5. add bacon garlic and rosemary cook for 10 minutes
  6. remove from oven and add olives
