Ingredients
- 500 g mixed fruit
- ¾ cup brown sugar
- pinch salt
- ¼ teaspoon nutmeg
- ½ cup cold water
- ½ teaspoon bicarbonate soda
- ½ teaspoon spice
- spirits, if desired
- 1 tablespoon syrup or treacle
- 3 eggs
- 1 packet bakeo pastry mixture
Instructions
- Place fruit, sugar, water, salt, spices, bicarbonate soda and spirits in a saucepan. Boil and allow to cool. Add syrup, well beaten eggs and packet of bakeo. Beat until smooth. Place in a greased basin and tie greased paper over basin firmly to make it airtight. Steam 3 to 3 ½ hours. If pudding is allowed to stand, reheat for ¾ hour before serving. Serve with brandy sauce.
