Hawaiian Veal

Ingredients
- 1 kg veal cut into cubes
- 1 cup claret
- 1 large tin pineapple pieces
- 1 tablespoon brown sugar
- 500 g tin peeled tomatoes, thickened
- ½ red pepper
- ½ green pepper
- 1 dessertspoon finely chopped green ginger (optional)
- 250 g bacon, chopped
Instructions
- Place pineapple pieces on bottom of a greased casserole dish and sprinkle with brown sugar. Add veal, salt & pepper, peppers, tomatoes and bacon. Pour over claret. Bake in a moderate oven for about 1 hour. Add more liquid if too dry and thicken with cornflour when cooked. Serves 8
