Hawaiian Veal

Ingredients
  • 1 kg veal cut into cubes
  • 1 cup claret
  • 1 large tin pineapple pieces
  • 1 tablespoon brown sugar
  • 500 g tin peeled tomatoes, thickened
  • ½ red pepper
  • ½ green pepper
  • 1 dessertspoon finely chopped green ginger (optional)
  • 250 g bacon, chopped
Instructions
  1. Place pineapple pieces on bottom of a greased casserole dish and sprinkle with brown sugar. Add veal, salt & pepper, peppers, tomatoes and bacon. Pour over claret. Bake in a moderate oven for about 1 hour. Add more liquid if too dry and thicken with cornflour when cooked. Serves 8
