Coconut Chicken Curry

Ingredients
  • 1 ½ cups jasmine rice
  • 1 TBS peanut oil
  • 8 chicken thigh cutlets, excess fat removed
  • 1 brown onion cut into wedges
  • 1-2 tbs bought red curry paste
  • 1 – 400ml can coconut milk
  • 6 kaffir lime leaves
  • 1 tbs brown sugar
  • 1 tbs fish sauce
  • 1 tbs fresh lime juice
Instructions
  1. heat ½ oil in wok – medium high heat. add chicken cook 4-5 mins until chicken is browned all over. Remove chicken
  2. add remaining oil, onion, and curry paste cook for 2 mins or until onion softens slightly.
  3. add coconut oil, bring to boil over medium high heat., add chicken and kaffir lime leaves reduce heat and simmer uncovered for 20 minutes or chicken is cooked.
  4. Stir in sugar, fish sauce and lime juice. Remove lime leaves and discard.
  5. Serve with rice.
