Coconut Chicken Curry

Ingredients
- 1 ½ cups jasmine rice
- 1 TBS peanut oil
- 8 chicken thigh cutlets, excess fat removed
- 1 brown onion cut into wedges
- 1-2 tbs bought red curry paste
- 1 – 400ml can coconut milk
- 6 kaffir lime leaves
- 1 tbs brown sugar
- 1 tbs fish sauce
- 1 tbs fresh lime juice
Instructions
- heat ½ oil in wok – medium high heat. add chicken cook 4-5 mins until chicken is browned all over. Remove chicken
- add remaining oil, onion, and curry paste cook for 2 mins or until onion softens slightly.
- add coconut oil, bring to boil over medium high heat., add chicken and kaffir lime leaves reduce heat and simmer uncovered for 20 minutes or chicken is cooked.
- Stir in sugar, fish sauce and lime juice. Remove lime leaves and discard.
- Serve with rice.
