Curry Rice Salad (Amanda)

Ingredients
  • 1 ½ cups uncooked rice
  • ½ red capsicum
  • 1 green apple
  • 420g tin corn kernels
  • ½ cup currants
  • ¼ cup oil
  • ⅓ cup honey
  • ¼ cup vinegar
  • pinch salt
  • 1 good heaped tablespoon curry powder
Instructions
  1. Cook rice and cool.
  2. Cut up capsicum and apple. Mix up with rice, corn and currants.
  3. Mix oil, honey, vinegar, salt and curry powder.
  4. Pour dressing over the rice mixture before serving.
