Curry Rice Salad (Amanda)

Ingredients
- 1 ½ cups uncooked rice
- ½ red capsicum
- 1 green apple
- 420g tin corn kernels
- ½ cup currants
- ¼ cup oil
- ⅓ cup honey
- ¼ cup vinegar
- pinch salt
- 1 good heaped tablespoon curry powder
Instructions
- Cook rice and cool.
- Cut up capsicum and apple. Mix up with rice, corn and currants.
- Mix oil, honey, vinegar, salt and curry powder.
- Pour dressing over the rice mixture before serving.
