Mexican Fiesta Rice

Ingredients
- 700 g minced beef
- 1 tablespoon oil
- 1 large onion, chopped
- 420 g can tomatoes
- 1 cup corn kernels, canned or frozen
- ½ cup red or green pepper strips
- ¼ teaspoon pepper
- ¼ teaspoon chilli powder
- water
- 1 beef stock cube
- 1 ½ cups cooked rice
Instructions
- Brown meat in oil over high heat, without breaking up mince completely.
- Reduce heat and add onion, cooking until onion is transparent.
- Add chopped drained tomatoes (reserve liquid), corn, pepper and seasonings.
- Make up tomato liquid to 3 cups with water. Add to pan with stock cube. Bring mixture to boil, stir in rice, cover and simmer for 20 minutes over low heat.
