Lentil Soup Stew

Ingredients
  • 1 onion, chopped small
  • 4 carrots, chopped, not too small
  • 1 red capsicum, diced large
  • 3 zucchini, diced large
  • good size piece of pumpkin (I used a soup bowl full), diced large
  • olive oil
  • spinach chopped (fresh or frozen) (I used 1 bag of baby spinach, Del used 1 bunch of English spinach)
  • 400 g can diced tomatoes
  • 2 chorizo sausages, sliced & chopped in half
  • 250 g green or brown lentils (washed & cleaned) (I used a 400g can)
  • 2 bay leaves
  • 1 stock cube
  • salt & pepper to taste
Instructions
  1. Sauté the chorizo, remove to paper towels and remove fat from pan. Add a splash of olive oil to pan, and sauté lentils and onion. Add chopped vegetables (leaving spinach till later) & chorizo and toss through. Cover with hot water, add can tomatoes, bay leaves & stock. Boil, simmer for 30 minutes then add spinach and salt & pepper to taste, and simmer for another 25 to 30 minutes.
