Chocolate Sponge

Ingredients
- 4 eggs
- 1 cup castor sugar
- 1 ½ tablespoons butter
- 2 ½ tablespoons cocoa
- 4 tablespoons boiling water
- 1 ¼ cups self raising flour
- pinch salt
- cream filling
- glace icing
- walnut halves
Instructions
- Beat eggs until yolks and whites are combined. Gradually beat in sugar. Beat for about 5 minutes until very thick. Add butter and cocoa to boiling water. Fold in. Sift flour and salt twice. Sift again over surface of egg mixture. Fold in lightly and evenly. Fill into 2 greased 20 centimetre sandwich tins. Bake in moderate oven for 20 to 25 minutes. Remove from tins to wire rack and leave to cool. Split each sponge in half. Join layers with cream filling. Ice with glace icing. Decorate with walnut halves.
Cream Filling
- Put 1 cup cream in bowl. Sprinkle over 1 tablespoon of cocoa, 1 tablespoon castor sugar. Chill for 30 minutes at least. Whip until thick.
Glace Icing
- Sift 1 cup icing sugar and 2 tablespoons cocoa in saucepan. Add 1 tablespoon water and 1 teaspoon vanilla essence. Heat, stirring until the mixture has a pouring consistency. Pour over cake immediately. If necessary, smooth with spatula dipped in very hot water.
