Chocolate Sponge

Ingredients
  • 3 eggs
  • 125 g sugar
  • 125 g flour
  • 2 tablespoons water
  • ½ teaspoon cream of tarter
  • 1 dessertspoon cocoa
  • ½ teaspoon bicarbonate soda
  • 1 dessertspoon butter
Chocolate Icing
  • 60 g cocoa
  • 3 tablespoons water
  • 250 g icing sugar
  • vanilla
Instructions
  1. Beat egg whites. Add yolks and sugar. Beat until thick. Stir in sifted flour and cream of tarter. Blend cocoa in water. Melt butter and mix in soda. Stir into cake mixture. Bake in a moderate oven for 20 minutes. Join with frosting, cover with chocolate icing.
  2. Put cocoa in saucepan and mix with water until smooth. Stir over low heat for a few minutes. Leave until cool. Add icing sugar and vanilla. Mix to a smooth paste. Stir over low heat until just warm. Add more water or icing sugar if required.
