Coffee Marble Cake

Ingredients
  • 2 ½ cups self raising flour
  • 1 ½ cups castor sugar
  • 1 teaspoon salt
  • 185 g butter or margarine
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 eggs
  • 4 teaspoons instant coffee
  • 2 teaspoons hot water
Sour Cream Frosting
  • 185 g chocolate pieces
  • 60 g butter or margarine
  • ½ cup sour cream
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 2 ¾ cup sifted icing sugar
  • chopped nuts
Instructions
  1. Grease and flour two 23 cm sandwich tins. Set oven temperature at moderate.
  2. Sift together flour, sugar and salt. Add softened butter or margarine, milk and vanilla. Beat with electric mixer at low speed for 1 ½ minutes. Add eggs and beat for 1 ½ minutes. Dissolve coffee in hot water. Blend coffee mixture into half the batter. Fill prepared tins with alternate spoonfuls of plain and coffee batters. Bake in a moderate oven 40 to 45 minutes or until a skewer inserted in the centre comes out clean. When cakes are cold, sandwich together with sour cream frosting and swirl remaining frosting over cake. Decorate with chopped nuts.
Sour Cream Frosting
  1. Put chocolate pieces and shortening in top of double boiler and melt over hot, not boiling, water. Remove from heat and blend in sour cream, vanilla and salt. Gradually beat in icing sugar to make a frosting of spreading consistency.
