Ginger Loaf

Ingredients
- 125 g butter
- 125 g sugar
- 3 egg yolks
- ½ teaspoon lemon essence
- 185 g plain flour
- 1 teaspoon baking powder
- pinch bicarbonate soda
- 2 level teaspoons ground ginger
- about 4 tablespoons milk
Instructions
- Cream butter and sugar. Add egg yolks one at a time, beating well. Add essence and milk, sifted dry ingredients and add more milk if necessary. Put into greased loaf tin. Brush with milk and sprinkle with sugar. Bake in moderate oven for about 1 hour.
