Ingredients
  • ½ cup sugar
  • 3 eggs
  • ½ cup arrowroot
  • 1 teaspoon plain flour
  • 1 teaspoon ginger
  • 1 teaspoon spice
  • 1 teaspoon cream of tarter
  • ½ teaspoon bicarbonate of soda
  • 1 large tablespoon honey
Instructions
  1. Beat eggs and sugar for 5 minutes. Add sifted dry ingredients and honey. Pour into a greased and paper lined Swiss roll tin (30 x 25 cm). Bake for 10 minutes in a hot oven (220oC). Turn out onto slightly damp tea towel sprinkled with castor sugar. Trim edges of roll. Roll up loosely in tea towel. Leave to cool. Unroll. Remove paper. Fill with mock cream or whipped cream. Roll up.
