Ingredients
- 155 g butter
- 2 eggs
- 310 g self raising flour
- 155 g sugar
- 6 tablespoons milk
- vanilla
Instructions
- Cream butter and sugar. Add eggs, milk, vanilla and sifted flour. Place in lamington tin. Bake in moderate oven for 30 to 40 minutes. Turn out. Leave until next day. Cut into squares.
Icing
- Beat 90 g butter, 250 g icing sugar, and add 2 tablespoons cocoa mixed with 1 dessertspoon coffee essence, vanilla and warm water. Cover squares of cake. Roll in coconut.
- Makes 2 dozen.
