Macadamia Nut Tarts

Ingredients
  • Pastry Cases
  • 1 ½ cups plain flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon nutmeg
  • 90 g butter or margarine
  • 4 to 5 tablespoons orange juice
Filling
  • 1 egg
  • ½ cup honey
  • 1 ½ teaspoons soft butter or margarine
  • 1 tablespoon flour
  • ½ teaspoon vanilla
  • 1 cup finely chopped macadamia nuts
Instructions
  1. Combine flour, sugar, salt and spices in a bowl. Rub in butter. Gradually stir in enough orange juice to make a dough that forms a ball. Press 2 teaspoons into each hole in a small patty pan tin. Chill for 30 minutes.
Filling
  1. Beat egg until very thick. Gradually beat in honey, butter, flour and vanilla. Stir in nuts. Spoon into pastry cases and bake in a moderate oven for 12 to 15 minutes until the tops are bubbly and browned. Cool and remove from tins. Store in an airtight container with plastic wrap between layers.
