Macadamia Nut Tarts

Ingredients
- Pastry Cases
- 1 ½ cups plain flour
- 2 tablespoons sugar
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- ¼ teaspoon ground ginger
- ⅛ teaspoon nutmeg
- 90 g butter or margarine
- 4 to 5 tablespoons orange juice
Filling
- 1 egg
- ½ cup honey
- 1 ½ teaspoons soft butter or margarine
- 1 tablespoon flour
- ½ teaspoon vanilla
- 1 cup finely chopped macadamia nuts
Instructions
- Combine flour, sugar, salt and spices in a bowl. Rub in butter. Gradually stir in enough orange juice to make a dough that forms a ball. Press 2 teaspoons into each hole in a small patty pan tin. Chill for 30 minutes.
Filling
- Beat egg until very thick. Gradually beat in honey, butter, flour and vanilla. Stir in nuts. Spoon into pastry cases and bake in a moderate oven for 12 to 15 minutes until the tops are bubbly and browned. Cool and remove from tins. Store in an airtight container with plastic wrap between layers.
