Ingredients
  • 125 g butter
  • 2 eggs
  • salt
  • vanilla essence
  • 1 ¼ cups self raising flour
  • cochineal
  • ½ cup sugar
  • ¼ cup milk
  • 2 tablespoons mixed fruit or sultanas
Instructions
  1. Cream butter and sugar, salt and essence. Add eggs one at a time, then milk and sifted flour. Take one third of the mixture and colour pink. Add mixed fruit or sultanas. Grease a tube or loaf tin, spread plain mixture around sides and base of tin. Place pink mixture in centre and bake in moderate oven 30 to 35 minutes. When cool ice with pale green icing.
