Pineapple Boiled Fruit Cake

Ingredients
  • 470 g can crushed pineapple
  • ¾ cup sugar
  • 500 g mixed fruit
  • 1 teaspoon bicarbonate soda
  • 1 teaspoon spice
  • 125 g butter
  • 1 cup self raising flour
  • 1 cup plain flour
  • pinch salt
  • 1 beaten egg
Instructions
  1. Boil pineapple, fruit, soda, spice, butter and sugar for 3 minutes. Cool and add beaten egg and flours. Bake in a 20 cm tin in a moderate oven for 1 ½ hours or until done.
