Pineapple Boiled Fruit Cake

Ingredients
- 470 g can crushed pineapple
- ¾ cup sugar
- 500 g mixed fruit
- 1 teaspoon bicarbonate soda
- 1 teaspoon spice
- 125 g butter
- 1 cup self raising flour
- 1 cup plain flour
- pinch salt
- 1 beaten egg
Instructions
- Boil pineapple, fruit, soda, spice, butter and sugar for 3 minutes. Cool and add beaten egg and flours. Bake in a 20 cm tin in a moderate oven for 1 ½ hours or until done.
