Quick Mix Coffee Cake

Ingredients
- 3 teaspoons instant coffee powder
- 1 tablespoon hot water
- 1 cup self raising flour, sifted
- ¼ cup custard powder, sifted
- ¾ cup brown sugar
- ⅓ cup milk
- 2 eggs
- 125 g butter, softened
Icing
- 60 g melted butter
- 1 ½ cups icing sugar
- 1 teaspoon honey
- 1 teaspoon vanilla
- 2 tablespoons hot water
- 2 teaspoons coffee powder
Instructions
- Dissolve coffee in hot water. Add to large bowl of electric mixer with remaining ingredients. Beat on low until combined. Increase speed, beat until smooth and mixture has changed colour. Put into greased and lined 20 cm ring tin. Bake in moderate oven for 30 minutes. Stand for a few minutes and turn onto wire rack.
Icing
- Combine butter with half of the icing sugar. Stir in honey, vanilla, water and coffee. Gradually stir in remaining icing sugar. Beat until thick.
