Ingredients
  • ½ cup sweet sherry
  • 1 ¼ cups sultanas
  • 125 g butter
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 2 teaspoons cornflour mixed with 1 tablespoon water
  • 2 eggs
  • ¾ cup self raising flour
  • ¾ cup plain flour
  • pinch salt
  • almonds
Instructions
  1. Bring sherry to the boil. Add the sultanas and simmer until liquid is absorbed. Cool. Cream butter and sugar. Beat in vanilla and water and cornflour. Add eggs one at a time. Beat well. Fold in sifted flours and salt. Add sultanas. Grease a deep 15 cm tin and line with greased paper. Arrange almonds on top. Bake in slow oven for 1 hour.
