Sultana Cherry Cake

Ingredients
- ½ cup sweet sherry
- 1 ¼ cups sultanas
- 125 g butter
- ½ cup sugar
- 1 teaspoon vanilla
- 2 teaspoons cornflour mixed with 1 tablespoon water
- 2 eggs
- ¾ cup self raising flour
- ¾ cup plain flour
- pinch salt
- almonds
Instructions
- Bring sherry to the boil. Add the sultanas and simmer until liquid is absorbed. Cool. Cream butter and sugar. Beat in vanilla and water and cornflour. Add eggs one at a time. Beat well. Fold in sifted flours and salt. Add sultanas. Grease a deep 15 cm tin and line with greased paper. Arrange almonds on top. Bake in slow oven for 1 hour.
