Ingredients
- 2 cups self raising flour
- ¼ cup castor sugar
- 60 g butter
- 1 egg
- ¾ cup buttermilk
Instructions
- Sift flour and sugar into a large bowl, rub butter in evenly with fingertips. Beat eggs and buttermilk together with a fork. Make a well in the centre of the dry ingredients. Use a knife to quickly stir enough liquid to make a soft dough. The amount of liquid depends on how much the flour can absorb. The dough must be soft and sticky to give a light fluffy result.
