Cherry and Coconut Slice

Ingredients
  • 250 g Morning Coffee biscuits
  • 125 g copha
  • ¾ cup condensed milk
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla
  • few drops cochineal
  • ¼ to ½ cup chopped glace cherries
  • 2 cups coconut
Instructions
  1. Cover base of 23 cm shallow tin with half of the biscuits. Melt copha until just warm. Add milk, vanilla, cochineal, lemon juice, cherries and coconut. Mix well. Spread over biscuits. Top with remaining biscuits. Press down firmly and ice with chocolate icing. Chill. Cut into slices.
Icing
  1. Melt 60 g copha. Add 1 dessertspoon cocoa, about 60 g icing sugar and vanilla. Spread quickly over slice.
