Coffee Butterfly Cakes

Ingredients
- 185 g self raising flour
- 125 g butter
- pinch salt
- 125 g castor sugar
- 2 eggs
- 1 dessertspoon coffee essence
- 1 tablespoon milk
Instructions
- Cream butter and sugar. Add beaten eggs. Fold in half of the flour. Add the coffee essence and milk and add the remainder of the flour. Spoon into paper parties and bake in a hot oven (220oC) for 15 minutes. When cold, slice off the tops and fill with sweetened whipped cream.
