Ingredients
  • Melt 1 heaped tablespoon of butter, then add ½ cup boiling water. When mixture boils up add ½ cup self raising flour. Mix quickly. Remove from heat and add 2 unbeaten eggs, 1 at a time. Beat until mixture is quite smooth. Place small spoonfuls on a greased tray and bake in a moderate oven for 30 minutes. Do not open oven. When cool, cut and fill with whipped or mock cream or custard. Dust with icing sugar.
Boiled Custard for Puffs
  • 45 g butter
  • 30 g flour
  • 300 ml milk
  • 2 egg yolks
  • vanilla
  • 1 tablespoon sugar
Instructions
  1. Melt butter, add flour. Beat until smooth. Add milk, and stir until boiling. Remove from heat and add well beaten egg yolks and sugar. Return to heat and cook. Add vanilla.
