Crisp Coconut Biscuits

Ingredients
  • 125 g margarine
  • 1 cup sugar
  • 2 cups self raising flour
  • pinch of salt
  • 1 cup coconut
  • 1 egg
  • extra sugar
Instructions
  1. Cream butter and sugar. Beat in egg, add sifted flour, then coconut. Roll into balls. Press flat between hands. Dip top side in sugar. Place on a greased tray - allow room for spreading. Bake in a moderate oven for 10 to 15 minutes. Makes 3 dozen.
