Marshmallow Delights

Ingredients
Biscuits
- 125 g butter or margarine
- 125 g sugar
- 1 egg yolk
- 185 g plain flour
- 2 level tablespoons cornflour
- 1 teaspoon baking powder
- about 1 tablespoon milk
Marshmallow
- 1 ½ teaspoons gelatine
- ¼ cup boiling water
- 2 tablespoons lemon juice
- 1 egg white
- 1 cup sifted icing sugar
- vanilla essence
Instructions
Biscuits
- Mix butter with sugar. Add egg yolk. Work in sifted dry ingredients, adding milk to make a dry dough. Turn onto floured board. Roll thinly and cut into plain rounds with a 6 cm cutter. Bake in a moderate oven for 10 to 12 minutes. Join with filling and top with marshmallow and sprinkle with coloured coconut.
Marshmallow
- Stir gelatine into the boiling water, stir until dissolved. Put aside until syrupy and then stir in the lemon juice. Beat egg white until stiff. Slowly pour in the gelatine, mix well. Beat in sifted icing sugar, vanilla essence and colouring (optional). Marshmallow sets quickly.
