Pineapple Banana Tarts

Ingredients
  • 1 cup grated pineapple
  • ½ cup sugar
  • 1 rounded tablespoon cornflour
  • 2 bananas
  • 1 ½ tablespoons lemon juice
Pastry Cases
  • 125 g plain flour
  • pinch salt
  • 60 g butter
  • 1 egg yolk
  • 1 teaspoon lemon juice
  • 1 tablespoon cold water
Instructions
  1. Place pineapple, sugar and cornflour in a saucepan. Stir until boiling. Boil for 1 minute. Add mashed banana and lemon juice (off the stove). Place 1 teaspoon of mixture into a pastry case and top with meringue.
  2. Rub butter into flour. Mix in egg yolk, lemon juice and water. Roll out to 3 mm thick. You may need to add more water.
