Pineapple Banana Tarts

Ingredients
- 1 cup grated pineapple
- ½ cup sugar
- 1 rounded tablespoon cornflour
- 2 bananas
- 1 ½ tablespoons lemon juice
Pastry Cases
- 125 g plain flour
- pinch salt
- 60 g butter
- 1 egg yolk
- 1 teaspoon lemon juice
- 1 tablespoon cold water
Instructions
- Place pineapple, sugar and cornflour in a saucepan. Stir until boiling. Boil for 1 minute. Add mashed banana and lemon juice (off the stove). Place 1 teaspoon of mixture into a pastry case and top with meringue.
- Rub butter into flour. Mix in egg yolk, lemon juice and water. Roll out to 3 mm thick. You may need to add more water.
