Scones (Using Oil)

Ingredients
- 1 egg
- 1 dessertspoon sugar
- 1 tablespoon oil
- ¾ cup milk
- 2 cups self raising flour
- ½ teaspoon salt
- milk for glazing
Instructions
- Preheat heat oven to hot. Beat egg and sugar until thick, add oil to milk. Sift flour and salt into a bowl make a well in centre. Stir in egg mixture, then add milk mixture and mix to a soft dough. Turn out onto a floured surface, knead lightly. Pat or roll to 1 cm thickness. Cut into rounds with a 5 cm cutter. Place on a lightly greased scone tray, brush tops with a little cold milk. Bake in hot oven for 10 to 12 mins
- Add ½ cup dates or sultanas for a nice variation.
- If using powdered milk, add 1 heaped tablespoon of powered milk to dry ingredients and use 1 cup water.
