Special Occasion Slice

Ingredients
- 90 g butter or margarine
- 2 tablespoons sugar
- 1 egg
- 1 cup plain flour
- 1 teaspoon baking powder
First Topping
- 60 g butter or margarine
- 2 tablespoons cocoa
- 2 tablespoons coconut
- 2 tablespoons finely chopped walnuts
Second Topping
- 30 g butter or margarine
- ¼ cup sugar
- 1 tablespoon golden syrup
- ½ tin condensed milk
- 2 egg yolks
Third Topping
- 2 egg whites
- 4 tablespoons sugar
Instructions
- Cream butter and sugar of biscuit ingredients. Beat in eggs, add sifted flour and baking powder. Spread evenly in a 28 x 18 cm tin.
First Topping: Melt butter. Mix in cocoa, coconut and walnuts. Spread on biscuit.
Second Topping: Melt together, over low heat, butter, sugar, syrup and condensed milk. Blend well. Beat in egg yolks and spread over first topping.
Third Topping: Beat egg whites until frothy and stiff. Gradually add sugar and beat until stiff. Spread over top and bake in a slow oven (180oC) for about 40 minutes.
- When cool, cut into fingers.
