Ingredients
  • 1 egg
  • 1 cup crushed Nice biscuits (9)
  • ½ cup castor sugar
  • 60 g butter or margarine
  • 1 or 2 lemons
  • ½ teaspoon vanilla
  • 185 g cream cheese
Instructions
  1. Crush biscuits and mix in melted butter. Press in a 23 cm cake tin. Chill in the fridge.
  2. Beat cheese and sugar until creamy. Add egg and lemon juice and beat until well mixed through. Pour into the chilled crumb crust. Bake for 20 to 25 minutes in a moderate oven.
