Christmas Pudding

Ingredients
- 1 kg mixed fruit
- 250 g dates
- 250 g raisins
- 2 cups water
- 1 cup white sugar
- 1 cup brown sugar, lightly packed
- 1 teaspoon salt
- 250 g butter
- 2 teaspoons bicarbonate soda
- ¼ cup rum
- 3 eggs
- 2 cups plain flour
- 2 cups self raising flour
- 2 teaspoons mixed spice
- 1 teaspoon cinnamon
Instructions
- Put fruit in pan. Add roughly chopped dates and raisins. Add water, sugar, salt and butter. Stir over low heat until butter melts. Bring to boil. Reduce heat and simmer uncovered for 8 minutes, stirring occasionally. Remove from heat. Add soda and mix well. Allow to completely cool.
- Beat eggs and rum to combine. Add egg mixture, sifted flours and spices to fruit mixture. Mix well.
- Tie in a floured pudding cloth. Put in a large boiler three quarters full with boiling water. Boil rapidly for 6 hours. On serving day reboil for 1 ½ hours.
