Ingredients
  • 1 egg
  • 2 tablespoons sugar
  • 1 tablespoon butter
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 4 tablespoons boiling water
  • pinch salt
  • boiling fruit, already stewed (apricots are especially nice)
Instructions
  1. Beat butter and sugar, add egg and boiling water. Sift in dry ingredients. Put the fruit with very little juice in a pie dish. Cover with the batter and bake about ½ an hour in a moderate oven.
