Ingredients
  • 1 tablespoon butter
  • 2 tablespoons sugar
  • 1 egg
  • 1 cup S.R flour
Instructions
  1. Press into lamington tray and bake into a moderate oven.
  2. Make 1 ½ jellies and bring to boil and thicken with 2 tablespoons arrowroot. Cool a little and spread on pastry.
  3. Boil 1 ½ cups of milk and thicken with 1 ½ tablespoons cornflour. When cool add 1 tablespoon butter and 2 tablespoons of icing sugar creamed together with vanilla. Spread over jelly and sprinkle with coconut.
