Lemon Meringue Pie

Ingredients
Crumb Crust
  • 125 g butter, melted
  • 185 g plain sweet biscuit crumbs
Filling
  • 1 can sweetened condensed milk
  • juice and rind of 1 large lemon
  • 2 tablespoons castor sugar
  • 2 eggs, separated
Instructions
Crumb Crust
  1. Mix biscuit crumbs and melted butter together. Press into a 23 cm pie plate and bake in a moderate oven for 5 minutes.
Filling
  1. Mix egg yolks with condensed milk, lemon juice and grated rind until smooth. Pour into pie crust. Beat egg whites until peaks form and gradually beat in the castor sugar until stiff. Spread on top of filling. Bake in a moderate oven until the meringue is golden.
