!Pastry 1 ½ cups plain flour ½ teaspoon baking powder 1 teaspoon sugar 125 g butter about ½ cup water !Filling juice and rind of two lemons 1 cup sugar 1 tablespoon butter yolk of 3 eggs 1 cup water 1 ½ tablespoons cornflour (just rounded) !Meringue whites of 3 eggs 4 tablespoons sugar ½ teaspoon vanilla

Pastry
- Rub butter into flour. Add water. Roll out. Prick bottom and bake.
Filling
- Combine all together in double saucepan until thick. Cool in cold water.
