!Pastry 1 ½ cups plain flour ½ teaspoon baking powder 1 teaspoon sugar 125 g butter about ½ cup water !Filling juice and rind of two lemons 1 cup sugar 1 tablespoon butter yolk of 3 eggs 1 cup water 1 ½ tablespoons cornflour (just rounded) !Meringue whites of 3 eggs 4 tablespoons sugar ½ teaspoon vanilla
Instructions
Pastry
  1. Rub butter into flour. Add water. Roll out. Prick bottom and bake.
Filling
  1. Combine all together in double saucepan until thick. Cool in cold water.
