Norco Passionfruit Pie

Ingredients
- 1 ready baked pastry case
- 125 g butter
- 1 ½ cups sugar
- 1 ½ cups water
- 3 tablespoons cornflour
- ½ cup lemon juice
- 6 passionfruit pulped
- 2 egg yolks
Instructions
- Beat egg yolks with ½ cup water. Blend cornflour in remaining water. Add sugar, lemon juice and butter. Bring to the boil, stirring continuously. Boil one minute. Stir in egg yolks and allow to thicken. Add passionfruit and pour into pastry case. Serve cold with whipped cream.
