Orange and Passionfruit Tart

Instructions
Pastry
  1. Rub 1 ½ tablespoons margarine into 2 tablespoons each of cornflour, self raising flour, 1 tablespoon sugar and a pinch of salt. Add 1 beaten egg yolk and enough milk to make a stiff dough. Roll thinly and bake.
Orange Filling
  1. Bring to boil 1 cup water, ¾ cup sugar and 1 dessertspoon butter. Mix 1 dessertspoon each of cornflour and custard powder with the juice of 1 large orange and 1 lemon, or 2 small oranges. Add to boiling syrup. Stir until thick. Pour into pastry case.
Passionfruit Cream
  1. Boil 1 cup milk and thicken with 1 tablespoon cornflour. Take off heat and add 1 dessertspoon butter, 3 dessertspoons of icing sugar and pulp of 4 or 5 passionfruit. Pour on filling and cool.
