Apricot and Rice Salad

Ingredients
- 1 ½ cups long grain rice
- 3 cups salted water
- 12 apricots, halved and stoned
- thick sliced ham cut into 3 cm strips
- 1 cucumber peeled, seeded and sliced
- 8 green shallots chopped
- soft leaf lettuce
Instructions
- Wash rice. Add to boiling water. Return to boil. Stir once. Turn heat as low as possible, cover and steam gently for 20 minutes. Remove from heat. Fluff up with fork. Allow to cool.
- In bowl combine rice, apricots, ham, cucumber and shallots.
Dressing
- cup yoghurt
- ¼ cup light cream
- salt and pepper
- tablespoons chopped mint
