Ingredients
Short Pastry Flan Case
  • 1 cup plain flour
  • pinch salt and baking powder
  • 60 g butter
  • 1 egg yolk
  • good squeeze lemon juice
  • 2 tablespoons cold water
Filling
  • 185 g cheese, grated
  • 1 tin asparagus tips
  • 3 eggs
  • ¾ cup cream
  • 1 small onion
  • ¼ teaspoon nutmeg
  • salt & pepper
Instructions
Short Pastry Flan Case
  1. Sift flour, salt and baking powder. Rub in butter. Beat egg yolk, water and lemon juice until mixed. Sprinkle evenly over flour and form a dough. Knead lightly. Wrap, chill for 30 minutes. Roll out to fit flan tin. NB Flan case may be brushed with a little egg white.
Filling
  1. Arrange alternate layers of asparagus and cheese in the flan case. Sprinkle with chopped onion. Beat eggs lightly. Combine with cream and seasonings. Pour over asparagus and cheese. Bake in hot oven 10 minutes. Reduce heat to moderate and cook for 30 minutes or until set.
