Mexican Fiesta Rice 1

Ingredients
- 1 250 gs minced beef
- 1 tablespoon oil
- 1 large onion, chopped
- 470 g can tomatoes
- 1 cup corn kernels, canned or frozen
- ½ cup red or green pepper strips
- ¼ teaspoon pepper
- ¼ teaspoon chilli powder
- water
- 1 beef stock cube
- 1 ½ cups cooked rice
Instructions
- Brown meat in oil over high heat, without breaking up mince completely. Reduce heat and add onion, cooking until onion is transparent. Add chopped drained tomatoes (reserve liquid), corn, pepper and seasonings. Make up tomato liquid to 3 cups with water. Add to pan with stock cube. Bring mixture to boil, stir in rice, cover and simmer for 20 minutes over low heat. Serves 6
