Tuna Rice Tart

Ingredients
- 2 cups boiled rice
- 1 egg, beaten
- 1 small onion, grated
- 30 g butter, melted
- 1 x 440 gram can tuna
- ½ cup thinly sliced celery
- 2 large beaten eggs
- ¾ cup milk
- ¼ teaspoon dry mustard
- ¾ cup grated tasty cheese
- 2 teaspoons chopped parsley
- salt and pepper
Instructions
- Mix together rice, onion, egg and melted butter. Press over base and sides of greased 23 cm tart plate. Drain tuna and break into flakes. Spread over rice. Top with celery. Stir into beaten eggs the milk, mustard, cheese, parsley, salt and pepper. Pour over tuna and bake in moderate oven about 45 minutes or until firm.
