Instructions
- Combine 6 cups of sugar with 4 cups of white vinegar. Boil syrup for 5 minutes. Add 12 cups of peeled and sliced mangos, 3 cups chopped raisins, 4 red chillies seeded and finely chopped, 1 large onion chopped finely, 1 crushed clove garlic, 1 teaspoon salt and 1 teaspoon ground ginger. Cook chutney for 1 hour in an open saucepan over moderate heat. Stir frequently until thick. Pack into hot jars.
