Mulberry Jam

Ingredients
  • 500 g mulberries
  • 300 ml water
  • 375 g sugar
  • grated rind and juice of ½ lemon
Instructions
  1. Wash and steam mulberries put in saucepan with water. Simmer over low heat until mulberries are tender. Add lemon rind and juice and sugar. Stir until sugar dissolves. Bring to the boil and continue boiling until jam jells when tested on a cold saucer. Begin testing after 20 minutes of boiling. Cool slightly before bottling in hot jars. Seal when cold. Makes 300 ml.
