Tomato and Ginger Jam

Ingredients
- 2 kg tomatoes
- juice of 3 lemons
- 60 g crystallised ginger
- 1.5 kg sugar
Instructions
- Skin and slice tomatoes. Place in pan with lemon juice and finely sliced ginger. Cook until tomatoes are soft. Add sugar and cook quickly until mixture gels.
- Variations
- The pulp of one pineapple or the pulp of 6 passionfruit may be added to the above jam in place of ginger. In either case cook the pulp of the fruit with the tomatoes.
