Tomato and Ginger Jam

Ingredients
  • 2 kg tomatoes
  • juice of 3 lemons
  • 60 g crystallised ginger
  • 1.5 kg sugar
Instructions
  1. Skin and slice tomatoes. Place in pan with lemon juice and finely sliced ginger. Cook until tomatoes are soft. Add sugar and cook quickly until mixture gels.
  2. Variations
  3. The pulp of one pineapple or the pulp of 6 passionfruit may be added to the above jam in place of ginger. In either case cook the pulp of the fruit with the tomatoes.
