Tomato Pickles

Ingredients
  • 1.4 kg total of green tomatoes and mixed vegetables (cucumber, beans, cauliflower, choko)
  • 0.7 kg onions
  • 1 tablespoon salt
  • 2 cups sugar
  • 1 cup golden syrup
  • 750 ml white vinegar
  • ¾ cup plain flour
  • 2 dessertspoons mustard
  • 1 dessertspoon curry
  • 1 teaspoon turmeric
Instructions
  1. Cut up vegetables and sprinkle with salt. Stand overnight. Drain off liquid. Cover with cold water and boil until tender. Strain. Add enough vinegar to flour, mustard, curry powder and turmeric to make a smooth paste. Add the paste, sugar, syrup and remaining vinegar to the drained vegetables. Bring to the boil and boil for a few minutes until the mixture thickens. Bottle and seal when hot.
  2. Note: Fills 7 x 455g vegemite jars.
