Nana McDonald’s Lemon Slice / Tart

Ingredients
Pastry
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 1 cup plain flour and 1 teaspoon baking powder, or use 1 cup self raising flour
  • yolk of 1 egg
Lemon Cheese
  • 1 cup milk
  • 1 cup sugar
  • juice of 2 lemons
  • 2 or 3 eggs
  • 1 tablespoon cornflour
  • small amount of butter
Instructions
Pastry
  1. Place all ingredients into a food processor. Blend. Add 2 tablespoons water slowly until mixture goes into a ball. Roll into the bottom of a lamington tray or pie dish. Cook in a moderate oven until brown.
Lemon Cheese
  1. Put milk and sugar onto boil. When near to boiling add beaten eggs, lemon and cornflour. Add dollop of butter. Allow to cool slightly before putting on top of the pastry. Also allow to set a little before adding the topping.
Topping
  1. Put another cup of milk onto boil. Add 2 tablespoons sugar and thicken with 1 tablespoon cornflour. Place on top of the lemon. Sprinkle with coconut if desired.
  2. Lemon cheese and topping may be cooked in the microwave.
