Ingredients
Base
- ¾ cup plain flour
- ½ cup self-raising flour
- 1 egg
- ¾ cup sugar
- 125 g margarine
Lemon Filling
- juice of 2 lemons
- 1 cup boiling water
- ¾ cup sugar
- 2 heaped tablespoons custard powder
Topping
- 2 cups milk
- vanilla
- ½ cup sugar
- 2 heaped tablespoons cornflour
Instructions
- Cream margarine and sugar. Add flour and egg. Cook for 25-30 minutes in moderate oven (or until golden).
Lemon Filling
- Put strained lemon juice into a saucepan with boiling water and sugar. Dissolve custard powder in a small quantity of water and stir into the mixture until thick. Spread out over cooled base and cool.
Topping
- Dissolve cornflour in water. Add to milk, sugar and vanilla. Heat and stir until thick. Cool. Pour over lemon filling and sprinkle with coconut.
