Lemon Slice

Ingredients
Base
  • ¾ cup plain flour
  • ½ cup self-raising flour
  • 1 egg
  • ¾ cup sugar
  • 125 g margarine
Lemon Filling
  • juice of 2 lemons
  • 1 cup boiling water
  • ¾ cup sugar
  • 2 heaped tablespoons custard powder
Topping
  • 2 cups milk
  • vanilla
  • ½ cup sugar
  • 2 heaped tablespoons cornflour
Instructions
  1. Cream margarine and sugar. Add flour and egg. Cook for 25-30 minutes in moderate oven (or until golden).
Lemon Filling
  1. Put strained lemon juice into a saucepan with boiling water and sugar. Dissolve custard powder in a small quantity of water and stir into the mixture until thick. Spread out over cooled base and cool.
Topping
  1. Dissolve cornflour in water. Add to milk, sugar and vanilla. Heat and stir until thick. Cool. Pour over lemon filling and sprinkle with coconut.
