Ingredients
  • 1 Leg of Lamb
  • 2 cloves Garlic
  • few sprigs of Rosemary
  • 2 tbs olive oil
  • 3 cloves Garlic, crushed
  • 1 tsp thyme or oregano ( I use Tuscan seasoning)
  • Flaked Sea Salt & Crushed Pepper
  • 2 Lemons
  • Extra Virgin Olive Oil to finish
  • 2 tbsp parsley, chopped
Instructions
  1. Preheat oven to 160C
  2. Cut slits in lamb, insert sliced garlic and rosemary sprigs
  3. Rub lamb with the oil, garlic, herbs, salt and heaps of pepper (previously mixed together)
  4. Squeeze over the juice from 1 lemon
  5. Place lamb on a rack then the rack in a baking tray. Pour in enough water to com 2-3 cm up sides and cook for 5 or more hours. (I cook a 2.6 Kilo leg for 6 to 61/2 hours)
  6. Every hour or so baste with juices from the pan.
  7. After 3 hours once lamb is golden brown cover tightly with foil and continue to cook.
  8. Rest for 20 minutes before serving.
  9. Cut a couple of slashes on top and squeeze on some lemon juice and drizzle with the extra virgin olive oil, some flaked salt & ground pepper and a sprinkle of parsley.
