Ingredients
- 1 Leg of Lamb
- 2 cloves Garlic
- few sprigs of Rosemary
- 2 tbs olive oil
- 3 cloves Garlic, crushed
- 1 tsp thyme or oregano ( I use Tuscan seasoning)
- Flaked Sea Salt & Crushed Pepper
- 2 Lemons
- Extra Virgin Olive Oil to finish
- 2 tbsp parsley, chopped
Instructions
- Preheat oven to 160C
- Cut slits in lamb, insert sliced garlic and rosemary sprigs
- Rub lamb with the oil, garlic, herbs, salt and heaps of pepper (previously mixed together)
- Squeeze over the juice from 1 lemon
- Place lamb on a rack then the rack in a baking tray. Pour in enough water to com 2-3 cm up sides and cook for 5 or more hours. (I cook a 2.6 Kilo leg for 6 to 61/2 hours)
- Every hour or so baste with juices from the pan.
- After 3 hours once lamb is golden brown cover tightly with foil and continue to cook.
- Rest for 20 minutes before serving.
- Cut a couple of slashes on top and squeeze on some lemon juice and drizzle with the extra virgin olive oil, some flaked salt & ground pepper and a sprinkle of parsley.
